Ingredients (Serves 2) 

Protein & Healthy Fats 

  • 2 wild-caught salmon fillets 
  • 1 tbsp extra virgin olive oil 
  • 1 ripe avocado, sliced 

Base 

  • 1 cup cooked quinoa (or farro) 
  • 2 cups baby arugula or mixed greens 

Heart-Boosting Toppings 

  • ½ cup cherry tomatoes, halved 
  • ¼ cup cucumber, diced 
  • 2 tbsp red onion, thinly sliced 
  • 2 tbsp walnuts, chopped 
  • 1 tbsp fresh parsley 

Lemon-Herb Dressing 

  • 1 tbsp olive oil 
  • Juice of ½ lemon 
  • 1 tsp Dijon mustard 
  • Pinch sea salt + black pepper 

Preparation 

  1. Preheat oven to 400°F. 
  1. Drizzle salmon with olive oil and season lightly. 
  1. Bake for 10–12 minutes until flaky. 
  1. Assemble bowls with quinoa and greens as the base. 
  1. Add salmon, avocado, vegetables, and walnuts. 
  1. Whisk dressing ingredients and drizzle over the bowl. 
  1. Garnish with parsley and serve immediately.
